With the spring in full swing, it’s time to enjoy some light and easy dinners.

Actually, this one is inspired by a vegetable roast side dish for Christmas dinner…

Another great recipe from the Marcus at Home cookbook to give our new pasta machine a spin.

I followed the suggestion to make a double portion as it was advertised by Daniel Gritzer of seriouseats.com as an epic vegetarian sauce.

Whatever you call this one, a Tian Provençal, ratatouille or a confit byaldi, they are all very nice varieties of delicious Mediterranean casseroles!

Oven bakes are so convenient, especially for large groups, and due to the long oven-time, they are usually bursting with flavor.

I was looking for a ragu bolognese in Tom Kerridge’s cookbook Best Ever Dishes and found this very interesting lasagna recipe.

Served with mashed potatoes and minted peas and mushrooms. A rather British supper.
