I kind of overdid it with the broccolini…
To our pleasant surprise, our son announced a couple of weeks ago that he wanted to cook dinner for all of us.
Koen and I had a mini-cookout a couple of weeks ago. ‘Quick and light’ was the motto and we kicked-off with this Courgette Carpaccio starter that is bursting with flavour!
We took Yotam Ottolenghi’s Plenty More cookbook from the bookshelf and in no time we found several vegetarian recipes to give a try.
I was initially a bit hesitant about the combination of ingredients and flavours for this chickpea salad, but it turned out super tasty.
