Spanish Tortilla with Onions and Red Pepper
A couple of weeks ago, we had the first beautiful spring weather and were busy booking a holiday to Spain. Putting one and one together, we quickly decided to make a Spanish potato tortilla for dinner.

Melanzane Alla Parmigiana
Melanzane Alla Parmigiana is definitely in my top 3 of Italian dishes: perfect comfort food. However, it’s a deceivingly simple recipe that is hard to nail.

Gnocchi with Courgette, Mascarpone and Spring Onions
A speedy week-day dinner and a lovely new way to eat gnocchi as we usually have them pan-fried with a sage/butter sauce or with some tomato sauce from the oven.

Vegetarian Burger with Halloumi with Green Goddess Dressing
Burger night today, so at least 1 veggie burger was made. This one is based on the Bacon & Halloumi Burger with Green Goddess Dressing from the White Pepper Project (now-defunct so unfortunately no link to the original recipe).

Fennel Risotto with Chopped Pistachios
I found this recipe in the wine/food pairing section of the Gall & Gall magazine. Fennel risotto is very subtle and has a nice sweetish touch.

Green Risotto with Mushrooms
I chose this recipe by J. Kenji López-Alt I found over at Serious Eats as it had an interesting take on how to cook risotto: it adds the stock in 2 batches instead of a ladle at the time.

Parsnip Soup with Apples and Walnuts by Marcus Samuelsson
I like root vegetable soups with spices, so when I saw some sunchokes (“aardperen”) in the supermarket, I immediately wanted to try them.
